The importance of knowing where the produce comes from is paramount at Halkær Kro, where ingredients are seasonal and sourced locally. At the same time, attention is paid to the different characteristics and implications of the ingredients used in the kitchen’s dishes.

With the Silver Organic Cuisine Label, 60–90 per cent of the ingredients and products at Alimentum are organic, and all vegetables are grown by Alimentum’s own local farmer. All their wine is organic or biodynamically produced, with the exception of locally produced wines, where Alimentum has chosen to eliminate the need for transport instead. If you fancy a good cut of meat or poultry, it’s reassuring to know that all the meat and poultry served here is locally and organically produced and/or reared in free-range conditions. When serving fish, Alimentum focuses on quality and fishing methods, choosing, for example, line-caught fish over fish caught with nets.
